Tiffany's Beef Empanadas

In the meantime this recipe will be a placeholder for my mother's argentinian recipe which i will replacing soon. I don't really like empanadas but my mom made the best ones!

Golden brown beef empanadas on a plate

Prep time: 45 minutes

Ingredients

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the chopped onion and garlic to the skillet and cook until softened.
  3. Stir in the chopped olives, raisins, hard-boiled eggs, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes. Remove from heat and let cool.
  4. Preheat oil in a deep fryer or large pot to 350°F (175°C).
  5. Roll out the empanada dough and cut into circles. Place a spoonful of the beef mixture in the center of each circle.
  6. Fold the dough over the filling to create a half-moon shape. Press the edges with a fork to seal.
  7. Fry the empanadas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
  8. Serve warm and enjoy!
